During the morning rounds Dale came in with a mug of pig's blood warmed to the precise temperature that he placed in the food slot of the cell door.

Along with a doughnut.

On the one hand: pig's blood. On the other: donut.

So Angelus took both and dunked the donut into the blood as a way of trying to make it go down. Spoonful of sugar and all that.
