Luke's, Monday

"That's not a pie," said the dishwasher. "That's a casserole!"

"It's called 'shepherd's pie'," said the cook.

"But it's not a pie! Look: 'A pie is a baked dish which is usually made of a pastry dough casing that covers or completely contains a filling of various sweet or savoury ingredients. Pies are defined by their crusts.' That doesn't have a crust."

"What's that from?"

"Wikipedia."

"Not a reliable resource. The pie stays."

"But --"

"And this does have a crust. A crust of potato and cheese. The greatest crust of all."

"You gonna break this up?" the busboy asked Eliot. Eliot shrugged.

"They start throwing things, I'll consider it."

"Ugh, fine," said the dishwasher. "But that's a quiche."

"Egg pie. With a crust, see?" asked the cook.

The dishwasher threw his arms in the air and groaned.
