When did Summer have the time to set up a whole casino-esque theme around the bar that day? When did Summer have the time to set up any of the weird, rando things she set up when the time struck her? Don't worry about it.
But there was definitely a theme going on that evening, some real high-class blackjack and hookers kind of thing, all because someone had learned how to make jello shots that looked like dice.

Red for beer, blue for whiskey, black is dealer's choice!
Plus you get the jello shot!
Of course, the biggest gamble of the night was Summer relying very heavily on the strutrual integrity of dice made of jello, but, come on. She'd made gloves out of jello before, dice were way easier, you just definitely could not handle them for too long.
Caritas is open!

"So," she continued, "anyway, it's craps rules. That means if you roll a two, three, or twelve, you crap out, game over, you gotta pay for your drink like the rest of the schlubs. You roll a seven, it's an instant win, and you get a drink of my choice. Any other roll establishes a point value that you have to roll on the second roll to get the free drink."
She paused, considering the wiggly little dice.
"Assuming they make it to a second roll, anyway."

Eh? See what she did there? Because it was a gamble??
"I mean," she offered, "they don't really roll like regular dice? They just kind of...flop? Maybe bounce a little? So it'd be pretty easy to cheat the system," especially so since, hello, Rey had the Force, but, also, Summer so did not see her just using it for something like this, "but I thought, eh. Why not? Go ahead and try! See what you roll!"

Now she wasn't so sure Rey wouldn't be the type to use the Force to cheat, but she wasn't abotu to open that box.
"That means you get a free drink!"
Which Summer had ready in, like, two seconds because she was really hoping Rey would win and she knew exactly what she was going to give her.
It was a Dr. Pepper.

"You didn't even need to think about that," she said, half-laughing as she reached for the drink.

She was going to be so disappointed if she didn't get a chance to foist the old Summer Smith on Lucifer or Seivarden.
"Do you think," she ventured, with a small laugh, "that just makes me a good bartender or just kind of...sad?"
